Mango Chutney with Hot Chillies: A Simple Recipe for South Asian Cuisine

Mango chutney, known as Corom Chatni, is a delightful South Asian condiment. It combines the sweetness of mango with the heat of chillies.   • 1 firm, almost-ripe mango
  • 1 fresh red or green chilli pepper, stemmed, slit lengthwise, seeded, and chopped
  • 1 teaspoon cilantro or mint, chopped
  • 1 teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • 2-3 tablespoons fresh orange juice or a mixture of orange and lime juice

  • Sharp knife
  • Small bowl

Procedure

  1. Place the mango on a work surface. Make a slit in the tip across its width with a sharp knife.
  2. Hold the mango upright on its stem end. Carefully slice the flesh off one side of the stone.
  3. Turn the mango and cut off the flesh from the other side of the stone.
  4. Place each mango half, skin-side down, on the work surface. Cut lines through the flesh down to the skin in a lattice pattern.
  5. Grasp the mango half with both hands. Turn the skin inside out by pushing it inwards with your fingers while pushing downward with your thumbs.
  6. You will now have inverted skin with cubes of flesh attached. Cut the cubes off with a sharp knife.
  7. Place the mango cubes in a small bowl.
  8. Add chilli, cilantro, cayenne, orange/lime juice, and salt. Mix gently with a spoon.
  9. Leave to marinate in the refrigerator for 1-2 hours before serving.
