Mango Chutney with Hot Chillies: A Simple Recipe for South Asian Cuisine
Mango chutney, known as Corom Chatni, is a delightful South Asian condiment. It combines the sweetness of mango with the heat of chillies. This chutney is perfect for adding a burst of flavour to your meals. It's easy to make and requires only a few ingredients. Let's explore how to prepare this tangy and spicy delight.
- 1 firm, almost-ripe mango
- 1 fresh red or green chilli pepper, stemmed, slit lengthwise, seeded, and chopped
- 1 teaspoon cilantro or mint, chopped
- 1 teaspoon salt
- ⅛ teaspoon cayenne pepper
- 2-3 tablespoons fresh orange juice or a mixture of orange and lime juice

- Sharp knife
- Small bowl
- Spoon
- Rubber gloves (optional)
Procedure
- Place the mango on a work surface. Make a slit in the tip across its width with a sharp knife.
- Hold the mango upright on its stem end. Carefully slice the flesh off one side of the stone.
- Turn the mango and cut off the flesh from the other side of the stone.
- Place each mango half, skin-side down, on the work surface. Cut lines through the flesh down to the skin in a lattice pattern.
- Grasp the mango half with both hands. Turn the skin inside out by pushing it inwards with your fingers while pushing downward with your thumbs.
- You will now have inverted skin with cubes of flesh attached. Cut the cubes off with a sharp knife.
- Place the mango cubes in a small bowl.
- Add chilli, cilantro, cayenne, orange/lime juice, and salt. Mix gently with a spoon.
- Leave to marinate in the refrigerator for 1-2 hours before serving.
