How To Prepare

1. Start by seasoning the chicken breasts with salt and pepper. Ensure that both sides are well seasoned. If you prefer, you can also use chicken thighs for this recipe, which can add a bit more flavor and tenderness.

2. In a large skillet or pan, heat the vegetable oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Next, add the minced garlic and grated ginger, stirring frequently to prevent burning. Cook for another 1-2 minutes until the garlic and ginger are fragrant.

3. To the skillet, add the curry powder, ground turmeric, paprika, thyme, and ground allspice. Stir the spices into the onion, garlic, and ginger mixture, allowing them to toast slightly. This will help to release their flavors and create a more aromatic base for the coconut chicken.

4. Once the spices are well incorporated, add the seasoned chicken breasts to the skillet. Cook the chicken for about 5-6 minutes on each side, or until they are golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C) to ensure it is safe to eat.

5. After the chicken has browned, add the chopped bell pepper to the skillet. Stir to combine with the chicken and spices. Bell peppers not only add color to the dish but also contribute a sweet and slightly tangy flavor that complements the richness of the coconut milk.

6. Pour the coconut milk into the skillet, stirring gently to mix it with the other ingredients. Bring the mixture to a gentle simmer, then reduce the heat to low. Allow the chicken to simmer in the coconut milk for about 15-20 minutes. This will enable the flavors to meld together and the chicken to become tender and infused with the creamy coconut sauce.

7. Taste the coconut sauce and adjust the seasoning as needed. Add more salt, pepper, or spices according to your preference. If you like a bit of heat, you can also add a pinch of cayenne pepper or some chopped chili for a spicier kick.

8. Just before serving, squeeze the juice of one lime over the coconut chicken. The lime juice adds a fresh, zesty flavor that brightens the dish and balances the richness of the coconut milk.

9. Garnish the coconut chicken with freshly chopped cilantro or parsley, if desired. This adds a touch of color and a fresh herbal note to the dish. Serve the coconut chicken over a bed of cooked white rice or coconut rice to soak up the delicious sauce.
