Ingredients
- 1 large head of cauliflower, broken into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon mustard powder
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- 1/4 teaspoon paprika (optional)
- 1/4 teaspoon ground nutmeg (optional)
- 1 tablespoon chopped fresh parsley (for garnish, optional)

How To Prepare
1. Begin by preheating your oven to 375°F (190°C). This ensures that your oven is at the right temperature when you're ready to bake the cauliflower cheese.
2. Wash and cut the cauliflower into bite-sized florets. Place them in a large pot and cover with cold water. Add a pinch of salt to the water to season the cauliflower as it cooks. 4. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook the sauce, whisking frequently, until it thickens and begins to bubble. This should take about 5-7 minutes.
5. Once the sauce has thickened, remove it from the heat and stir in the grated cheddar and Parmesan cheeses. Keep stirring until the cheese is fully melted and the sauce is smooth. Add the mustard powder, garlic powder, and a pinch of salt and black pepper to taste. If using, add the paprika and nutmeg for additional flavor.
6. Gently fold the cooked cauliflower into the cheese sauce, ensuring the florets are well coated.
7. Transfer the cauliflower and cheese sauce mixture into a baking dish. Spread it out evenly.
