- 2 pounds (910 g) pork spare ribs
- ¼ cup (60 ml) soy sauce
- 2 tablespoons honey
- 2 tablespoons hoisin sauce
- 2 tablespoons white vinegar
- 1 tablespoon sake
- 2 cloves garlic, minced
- 1 teaspoon sugar
- ¼ teaspoon freshly ground white pepper
- 2 tablespoons pork stock
- Freshly-ground black pepper and salt to taste
- 2 teaspoons cumin (optional)

Procedure
- Place the spare ribs in a large baking dish in one layer. In a small bowl, mix all other ingredients. Pour this mixture over the ribs, ensuring they are coated on both sides. Marinate overnight, basting occasionally.
