- 4 small zucchinis, halved lengthwise
- 2 cups crumbled cornbread, divided
- ½ tsp salt
- ½ tsp freshly-ground black pepper
- ½ cup cream cheese
- 4 eggs, separated
- 1 ½ cups grated Monterey Jack cheese
- ⅛ tsp cream of tartar

- Teaspoon or grapefruit spoon
- Mixing bowls
- Whisk or electric mixer
- Baking tray
- Oven
Procedure
- Scoop out the seeds from the zucchini halves using a teaspoon or grapefruit spoon. Set aside.
- In a bowl, combine 1 cup of crumbled cornbread with salt, pepper, egg yolks, and cream cheese. Mix well and set aside.
- Whip the egg whites to stiff peaks with cream of tartar using a whisk or electric mixer.
- Stir in one-quarter of the whipped egg whites into the cornbread mixture.
- Gently fold in the remaining egg whites into the mixture.
- Spoon enough mixture to fill the hollowed-out section of each zucchini half.
- Combine the remaining cornbread with grated Monterey Jack cheese. Sprinkle this over the top of each filled zucchini half.
- Bake in a preheated oven at 400°F (200°C) for 30-35 minutes or until the tops are browned and bubbly.
