  • 18 ounces ground chuck
  • 18 ounces ground sirloin
  • 6 ounces garlic-flavoured croutons
  • ½ teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme
  • ½ onion, roughly chopped
  • 1 carrot, peeled and broken
  • 3 whole cloves garlic
  • ½ red bell pepper
  • 1 ½ teaspoons salt
  • 1 egg

  • ½ cup barbecue sauce
  • 1 ½ tablespoons Worcestershire sauce
  • 2 tablespoons Tabasco sauce or similar
  • 1 tablespoon blackstrap molasses

Equipment Needed

  • Food processor
  • Large bowl
  • 10-inch loaf pan
  • Parchment paper-lined baking sheet
  • Temperature probe
  • Basting brush

Procedure

  1. Preheat the oven to 325°F.
  2. In a food processor, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until finely textured. Transfer to a large bowl.
  3. Add onion, carrot, garlic, and red pepper to the processor. Pulse until finely chopped but not pureed.
  4. Add the vegetable mixture to the bowl with the bread crumb mixture. Mix in ground sirloin and chuck.
  5. Add salt and egg to the meat mixture. Combine thoroughly without squeezing the meat.
  6. Mold the mixture into a loaf shape using a loaf pan. Turn it onto a parchment-lined baking sheet.
  7. Insert a temperature probe at a 45-degree angle into the top of the meatloaf. Avoid touching the tray's bottom with the probe. Set it for 155°F.
  8. Mix glaze ingredients together. Brush onto meatloaf after it has cooked for about 10 minutes.
  9. Once the meatloaf reaches 155°F, remove from oven. Let sit for about 8-10 minutes before serving.
