Barbecue Meatloaf is a delightful dish that combines the rich flavours of beef with a tangy glaze. This recipe uses ground chuck and sirloin, ensuring a juicy and tender loaf. - 18 ounces ground chuck
- 18 ounces ground sirloin
- 6 ounces garlic-flavoured croutons
- ½ teaspoon ground black pepper
- ½ teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- ½ onion, roughly chopped
- 1 carrot, peeled and broken
- 3 whole cloves garlic
- ½ red bell pepper
- 1 ½ teaspoons salt
- 1 egg

- ½ cup barbecue sauce
- 1 ½ tablespoons Worcestershire sauce
- 2 tablespoons Tabasco sauce or similar
- 1 tablespoon blackstrap molasses

- Large bowl
- 10-inch loaf pan
- Parchment paper-lined baking sheet
- Temperature probe
- Basting brush
Procedure
- Preheat the oven to 325°F.
- In a food processor, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until finely textured. Transfer to a large bowl.
- Add onion, carrot, garlic, and red pepper to the processor. Pulse until finely chopped but not pureed.
- Add the vegetable mixture to the bowl with the bread crumb mixture. Mix in ground sirloin and chuck.
- Add salt and egg to the meat mixture. Combine thoroughly without squeezing the meat.
- Mold the mixture into a loaf shape using a loaf pan. Turn it onto a parchment-lined baking sheet.
- Insert a temperature probe at a 45-degree angle into the top of the meatloaf. Avoid touching the tray's bottom with the probe. Set it for 155°F.
- Mix glaze ingredients together. Brush onto meatloaf after it has cooked for about 10 minutes.
- Once the meatloaf reaches 155°F, remove from oven. Let sit for about 8-10 minutes before serving.
