- Fresh cilantro, chopped (for garnish)

Appliances Required

How To Prepare
1. Begin by preparing the marinade for the chicken. In a large bowl, combine the yogurt, lemon juice, ground cumin, ground coriander, ground turmeric, ground paprika, ground garam masala, chili powder, salt, grated ginger, and minced garlic.
2. Mix well to form a smooth marinade. Add the chicken pieces to the bowl and ensure they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to infuse into the chicken.
3. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the marinated chicken pieces on the wire rack, allowing any excess marinade to drip off.
4. Bake the chicken in the preheated oven for 20-25 minutes, or until the chicken is cooked through and slightly charred around the edges. Alternatively, you can cook the chicken on a grill or stovetop grill pan. Once cooked, set the chicken aside.
5. While the chicken is baking, you can start preparing the masala sauce. Heat the ghee or vegetable oil in a large skillet or saucepan over medium heat. Add the finely chopped onion and sauté until it becomes golden brown and caramelized, about 8-10 minutes.
6. Add the minced garlic, grated ginger, and chopped green chilies (if using) to the skillet. Sauté for another 2-3 minutes until fragrant.
7. Add the ground cumin, ground coriander, ground turmeric, ground paprika, ground garam masala, and chili powder to the skillet. Stir well to coat the onions and aromatics with the spices. Cook for 1-2 minutes to toast the spices and enhance their flavors.
8. Pour the crushed tomatoes into the skillet and stir to combine with the spices and onions. Bring the mixture to a simmer and let it cook for about 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
9. Reduce the heat to low and slowly stir in the heavy cream or coconut milk. Continue to cook the sauce on low heat for another 5-7 minutes, allowing it to become rich and creamy. Add the sugar and salt to taste, adjusting the seasoning as needed.
10. Add the cooked chicken pieces to the masala sauce, stirring gently to coat them with the sauce. Simmer the chicken in the sauce for an additional 5-10 minutes to ensure the flavors meld together.
11. Once the Chicken Tikka Masala is ready, garnish it with freshly chopped cilantro. Serve the dish hot with steamed basmati rice, naan bread, or your favorite Indian bread. You can also pair it with a side of cucumber raita or a fresh salad for a complete meal.
