Total Time: Approximately 3 hours
Preparation Time: 45 minutes
Cooking Time: 2 hours and 15 minutes
Ingredients
For the Pork Roast:
- 1 (4 to 5-pound) boneless pork loin roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
For the Stuffing:
- 4 cups cubed day-old bread (preferably French or Italian)
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup celery, diced
- 1 cup carrots, diced
- 1/2 cup chicken or vegetable broth
- 1/2 cup chopped fresh parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- Salt and pepper to taste
For the Gravy (Optional):
- 2 tablespoons all-purpose flour
- 1 cup chicken or vegetable broth
- 1 tablespoon butter
How To Prepare
1. Preheat your oven to 375°F (190°C). This will ensure that your roast cooks evenly and reaches the desired temperature.
2. Pat the pork loin roast dry with paper towels. This helps the seasoning adhere better and promotes a crispy exterior. Rub the entire surface of the pork with olive oil. In a small bowl, combine salt, black pepper, paprika, garlic powder, and onion powder. Rub this seasoning mixture evenly over the pork loin, covering all sides.
3. Using a sharp knife, carefully butterfly the pork loin. Slice it lengthwise down the middle, but do not cut all the way through-leave about 1/2 inch of uncut pork on one side. Open the roast like a book to create a large, flat surface for the stuffing.
4. In a large skillet, melt the butter over medium heat. Add the chopped onion, garlic, celery, and carrots. Cook until the vegetables are tender and the onions are translucent, about 5-7 minutes.
5. In a large bowl, combine the cubed bread with the sautéed vegetables. Add the chicken or vegetable broth gradually, mixing until the bread is slightly moistened but not soggy. Stir in the chopped parsley, thyme, rosemary, sage, salt, and pepper. Adjust the seasoning to taste.
6. Spoon the stuffing mixture evenly onto the inside of the butterflied pork loin. Press the stuffing down gently to ensure it is packed tightly. Fold the pork loin back over the stuffing to enclose it. Use kitchen twine to tie the roast at 1-inch intervals to secure the stuffing and maintain the shape of the roast.
7. Place the stuffed pork roast on a rack in a roasting pan. Roast in the preheated oven for approximately 2 hours, or until the internal temperature of the pork reaches 145°F (63°C) on a meat thermometer. If you don't have a rack, you can place the roast directly in the pan.
8. Once the roast is cooked, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute throughout the meat, making it more tender and flavorful.
9. In a small saucepan, melt 1 tablespoon of butter over medium heat. Add 2 tablespoons of all-purpose flour and whisk continuously to form a roux. Cook for 1-2 minutes, or until the mixture is golden brown.
10. Gradually whisk in 1 cup of chicken or vegetable broth, continuing to whisk until the gravy is smooth and begins to thicken. Simmer for 2-3 minutes, then season with salt and pepper to taste.
11. Use a sharp knife to slice the stuffed pork roast into 1-inch thick slices. Arrange the slices on a serving platter.
12. If you made gravy, drizzle it over the slices of pork or serve it on the side.
13. Serve your stuffed pork roast with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh green salad.
