Explore the Authentic Sindhi Vegetable Kofta Recipe for a Delicious Meal
Sindhi Vegetable Kofta is a delightful dish from the Sindhi cuisine, known for its rich flavours and aromatic spices. This vegetarian recipe combines a variety of vegetables with spices to create delicious kofta balls. These are then cooked in a spicy tomato-based sauce. It's perfect for serving with roti, naan, or rice, making it a versatile addition to any meal.
- 20 ml water
- 4-5 tbsp cornstarch
- Salt to taste
- 75 g finely chopped carrot
- 150 g finely chopped cauliflower
- 100 g boiled potatoes, mashed
- 75 g finely chopped bell pepper
- 3-5 chiles, finely chopped
- 1-2 tbsp ground pepper
- 2-3 slices bread
- Oil for frying
- 150 g finely chopped onion
- 250 g chopped tomatoes
- 1-2 tbsp red chile powder
- 1 tbsp coriander powder
- 1-2 tbsp garam masala

- Mixing bowls
- Frying pan
- Paper towels
- Spoon for mixing
- Kadai or deep pan for frying
Procedure

Mix water, a pinch of salt, and cornstarch in a bowl. Ensure the mixture is thick.

In another bowl, combine carrot, cauliflower, mashed potatoes, bell pepper, chiles, salt, pepper, and garam masala.

Wet the bread slices and squeeze out excess water. Mix them into the vegetable mixture.

Mould the vegetable mixture into small balls. Dip each ball in the cornstarch mixture to coat well.

Heat oil in a pan and fry the balls until golden brown. Place them on paper towels to drain excess oil.

Add some oil to another pan and fry onions until golden brown. Add tomatoes and cook until they separate from the oil.

Add a little water, salt to taste, chile powder, and coriander powder. Bring this mixture to a boil.

Add the fried kofta balls to the sauce and let them cook for a while.

Remove from heat and mix in garam masala and pepper. Serve hot with roti, naan, or rice.
