Sai Bhaji: A Traditional Sindhi Vegetable Curry Recipe with Chickpeas and Greens
Sai Bhaji is a traditional Sindhi vegetable curry known for its rich flavours and nutritious ingredients. This dish combines various greens and vegetables, making it a wholesome meal. - 150 g dried chana dal
- 1 tbsp minced ginger
- 3-4 chopped chiles
- Oil for cooking
- 3 small bunches of fenugreek leaves, finely chopped
- 2 bunches of spinach, finely chopped
- Small amount of soy leaves, finely chopped
- 2 average-size tomatoes, chopped
- 2 eggplants, chopped
- 2 potatoes, chopped
- 8-10 okra pods
- 50 cloves of garlic, minced
- Salt to taste
- 2 pinches of turmeric powder
- 1 tbsp red chile powder

- Pot for boiling dal
- Frying pan for cooking vegetables
- Spoon for stirring
Procedure
- Soak the chana dal overnight. Drain and transfer the dal to a pot.
- Add ginger and chiles to the dal. Cover with water and boil for at least five minutes until tender. Drain.
- Heat oil in a pan. Add fenugreek leaves, spinach, soy leaves, tomatoes, eggplant, potatoes, and okra. Cook until the greens are well-wilted.
- Fry garlic in some oil until golden. Stir in salt, turmeric, and chile powder.
- Stir the garlic and dal into the vegetables.
- Serve hot.
