Total Time- 35 mins
Ingredients
For the Rice:
- 2 cups of cooked jasmine rice (preferably day-old rice)
- 1 cup of fresh pineapple, diced (canned pineapple can be used as well)
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 medium carrot, diced
- 1/2 cup of peas (fresh or frozen)
- 1/2 cup of corn kernels (fresh or frozen)
- 2 green onions, chopped
- 2 eggs, lightly beaten
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce (optional)
- 1 teaspoon of curry powder
- 1/2 teaspoon of turmeric powder
- 1/4 teaspoon of white pepper
- 3 tablespoons of vegetable oil (or any neutral oil)
- Salt to taste
For Garnish
- Fresh cilantro, chopped
- Roasted cashews or peanuts
- Lime wedges

How To Prepare
1. If you haven't prepared the rice in advance, cook it according to the package instructions. It's best to use day-old rice as it is less sticky and easier to fry. Spread the cooked rice on a baking sheet and let it cool to remove excess moisture.
2. If using fresh pineapple, peel, core, and dice it into small cubes. If using canned pineapple, drain the syrup and cut the pineapple into small pieces. Chop the onions, carrots, and green onions. Mince the garlic and set aside.
3. Heat a wok or large frying pan over medium-high heat. Add 1 tablespoon of oil and swirl to coat the pan. Pour in the beaten eggs and scramble them until they are fully cooked. Remove the scrambled eggs from the pan and set them aside.
4. In the same pan, add another tablespoon of oil. Add the chopped onions and garlic, and sauté until fragrant and the onions become translucent. Add the diced carrots, peas, and corn. Stir-fry the vegetables for about 3-4 minutes until they are tender but still crisp.
5. Add the diced pineapple to the pan and stir-fry for another 2 minutes. Sprinkle in the curry powder, turmeric powder, and white pepper. Mix well to ensure the spices coat the vegetables and pineapple evenly.
6. Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice for 5-7 minutes, making sure it is well-mixed with the vegetables and pineapple. Add the soy sauce and fish sauce (if using), and continue to stir-fry until the rice is evenly coated with the sauces and spices.
7. Return the scrambled eggs to the pan and add the chopped green onions. Stir well to combine all the ingredients. Cook for an additional 2-3 minutes to allow the flavors to meld together. Taste and adjust the seasoning with salt, if needed.
8. Pineapple fried rice can be served in a variety of ways, making it a versatile dish for any meal.

Notes, Tips And Variations
1. To make the pineapple fried rice more filling, add your choice of protein such as chicken, shrimp, or tofu. Simply cook the protein separately and mix it in during the final steps of stir-frying.
2. To keep the dish vegetarian or vegan, omit the fish sauce and ensure the soy sauce is vegan-friendly. Add more vegetables like bell peppers, broccoli, or snap peas for added nutrition and color.
3. If you enjoy spicy food, add some chopped fresh chili or a dash of hot sauce to the rice for a spicy kick. Sriracha or Thai chili paste works well with the flavors of pineapple fried rice.
4. Pineapple fried rice makes excellent leftovers. Store any remaining rice in an airtight container in the refrigerator for up to three days. Reheat in a pan over medium heat or in the microwave until warmed through.
