  • 800 g (6.5 ea) medium tomatoes, diced or puréed
  • 2 large cauliflowers, cut into chunks
  • 4-5 potatoes, peeled and cubed
  • 1 lemon
  • 3-5 tablespoons ghee or vegetable oil
  • 1 teaspoon cumin seeds
  • 5 tablespoons salt
  • 1 tablespoon ground turmeric
  • 2 tablespoons ground coriander
  • 1-2 tablespoons ground chilli pepper
  • 2-4 tablespoons garam masala
  • 5 sprigs of mint

Procedure

  1. Heat the ghee or oil in a frying pan, wok, or karahi.
  2. Add cumin seeds and wait until they turn light brown.
  3. Add the spices (except garam masala) and tomatoes.
  4. When the mixture becomes oily, add the cauliflower and potatoes.
  5. Roast until the vegetables are soft, stirring occasionally.
  6. Add garam masala, mint, and lemon juice before serving.
