Matar Paneer: A Timeless Indian Recipe Featuring Paneer and Peas

- 6 tablespoons oil
- 200 g paneer, cut into 1-inch cubes
- 1 teaspoon ginger-garlic paste
- 1 cup chopped onions
- 1 cup puréed tomatoes
- 3 green chilies, seeded and finely chopped
- ½ teaspoon cumin seeds
- ¼ teaspoon turmeric powder
- ½ teaspoon red chilli powder
- 1 teaspoon coriander powder
- Garam masala, to taste
- 1 teaspoon salt
- ½ cup peas
- 200 ml water
- 1 tablespoon chopped coriander

Procedure
Frying Paneer
- Heat oil in a deep pan.
- Add paneer cubes and fry on all sides until golden brown.
- Remove paneer and drain on paper towels.
Gravy Preparation
- Remove excess oil from the pan and add ginger-garlic paste.
- Add chopped onions and cook until translucent.
- Add puréed tomatoes and cook over medium heat until water evaporates.
- Let the mixture cool, then blend with chopped chilies until smooth.
Matar Paneer Assembly
- Heat oil in a pan and add cumin seeds. Fry until they crackle.
- Add turmeric, chilli powder, coriander powder, and garam masala. Mix well.
- Add the blended purée and mix over medium heat.
- Add salt and peas. Pour in water, cover, and steam until peas are cooked.
- Add fried paneer and mix well. Add more water if needed.
Tadka (Optional)
- Heat a small pan or tadka pan.
- Add 1 teaspoon oil and ½ teaspoon red chilli powder. Mix well.
- Add this tadka to the matar paneer before serving.
