Malvani Chicken Curry Recipe: A Taste of Authentic Indian Cuisine
Malvani Chicken Curry, also known as Kombdi Vade, is a popular dish from Maharashtra, India. This traditional recipe features chicken pieces cooked in a rich curry with spices.
It is often served with vade, a type of fried bread made from wheat and nachni flour. The dish is typically accompanied by onion, lemon, and solkadhi, a refreshing coconut milk drink.

- 8 green chillies, chopped
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 800 g (1.8 lb) medium-sized chicken pieces
- 2 tbsp oil
- 1 fresh coconut, grated
- 4 onions, chopped
- 1 tsp chilli powder
- ½ tsp turmeric
- 2 tsp garam masala
- 2 tsp Malvani Special Masala
- Salt to taste
- Finely-chopped coriander leaves for garnishing
- Grind half of the green chillies to a paste and mix with ginger and garlic pastes.
- Make cuts on the chicken pieces and rub this mixture onto them. Marinate for at least an hour.
- Toast coconut shavings in a pan with hot oil until light brown. Cool and grind with half the onions to a paste.
- Heat oil in a heavy-bottomed pan and sauté the onions on medium heat for about 2 minutes until light brown.
- Add remaining chopped green chillies and spice powders. Fry for a few seconds.
- Add marinated chicken pieces and fry on medium heat for about 3 minutes until lightly browned.
- Add the coconut-onion paste and salt. Mix well. Add water to desired consistency and bring to a boil.
- Cover and cook on low heat for about 25 minutes or until chicken is tender and fully cooked.
- Garnish with finely-chopped coriander leaves before serving.
