Malai Mixed Vegetable Curry Recipe: A Creamy Delight from Indian Cuisine
Malai Mixed Vegetable Curry is a creamy and delicious Indian dish. It is perfect as a side for Indian bread like naan or roti. This dish combines colourful vegetables with paneer and a rich, creamy sauce. The blend of spices adds depth and flavour, making it a favourite in many households.
- 3 green capsicums (bell peppers)
- 1 each of orange, yellow, and red capsicum
- 1 cup paneer cubes
- A handful of cashew nuts
- 4 large tomatoes
- 1 cup chopped carrot
- 1 cup peas
- 3-4 green chillies, finely chopped
- Dried parsley and cilantro
- 1 tablespoon butter or oil
- Garam masala to taste
- Red chilli powder to taste
- Salt to taste
- Turmeric to taste
- 1 quart whipping cream
- 1 tablespoon sour cream
- Cilantro for garnishing

- Knife and chopping board
- Sauté pan or skillet
- Blender or grinder
- Spoon for stirring
Procedure
- Cut the bell peppers into half-inch pieces.
- Sauté the paneer until golden brown and set aside.
- Soak cashew nuts in warm water.
- Grind tomatoes and soaked cashews into a fine paste. Set aside.
- Sauté chopped vegetables, green chillies, and dried parsley in butter or oil until cooked. Alternatively, microwave vegetables for about 10 minutes without water, then sauté in butter for a minute.
- Add tomato paste to the vegetables and cook for five minutes.
- Add garam masala, red chilli powder, salt, and turmeric. Simmer for two minutes.
- Add whipping cream and sour cream. Cook until the cream thickens.
- Add the paneer and mix well.
- Garnish with cilantro and cashew nuts.
- Serve hot with naan or roti.
