  • 3 cups whole milk
  • ¾ cup sugar
  • 1 tablespoon yoghurt, whisked
  • 1 tablespoon water

Procedure

  1. Place a heavy-bottomed pan on medium heat. Add the milk and warm it gently.
  2. Set aside one-third of the sugar. Add the remaining sugar to the milk.
  3. Reduce the heat and let the milk simmer until it reduces by half. Remove from heat and set aside.
  4. Add the reserved sugar to another pan over medium heat. Allow it to melt and caramelise.
  5. Once the sugar turns golden brown, add a tablespoon of water. Pour this caramel into the milk and stir well.
  6. Let the milk cool down. Add the whisked yoghurt and mix thoroughly.
  7. Pour the mixture into earthen pots. Let it set in a warm place for a few hours.
  8. Once set, refrigerate the Mishti Doi and serve chilled.
