Chilaquiles are popular in Mexico for breakfast but can also be enjoyed for lunch or dinner. They are a great way to use leftover tortillas and are affordable to make. If you haven't tried chilaquiles before, you're missing out on a delicious and easy-to-make dish.

Here is a simple recipe for chilaquiles:

Ingredients:

1 pound corn tortillas
1 tablespoon vegetable oil
1/2 cup salsa
1/4 cup shredded cheese
1/4 cup sour cream
1/4 cup guacamole
2 eggs
1 tablespoon chopped cilantro

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the tortillas and fry them until they are crispy.
  3. Remove the tortillas from the skillet and drain them on paper towels.
  4. Add the salsa to the skillet and bring it to a simmer.
  5. Add the tortillas back to the skillet and stir them to coat them with the salsa.
  6. Sprinkle the cheese over the tortillas.
  7. Cover the skillet and cook until the cheese is melted.
  8. Serve with sour cream, guacamole, eggs, and cilantro.

The first widely known chilaquiles recipe was published on this day in 1962. The word "chilaquiles" comes from the Aztec language Nahuatl, meaning "chilis and greens." Corn's prevalence in North America led people to find ways to repurpose stale tortillas. They discovered that frying tortillas into strips and sautéing them in salsa created a delicious dish.

The breakfast dish evolved into fried tortilla strips garnished with cream, queso fresco, onions, and avocados. In 1898, a popular Spanish cookbook included chilaquiles, helping spread their popularity outside of Mexico. Today, these tasty tortilla-based bites can be found on breakfast and brunch menus across Mexico and southwestern parts of the United States.

Chilaquiles' preparation varies across different regions in Mexico. Whether soaked in salsa or made of toasted totopos, people in Mexico take immense pride in these recipes.
