  • 5 cups (650 g) wheat flour
  • 1 teaspoon salt
  • ½ teaspoon active dry yeast or 1 teaspoon baking soda
  • 2 teaspoons ghee
  • 2 teaspoons sugar
  • 1 cup (275 g) yoghurt

Procedure

  1. Sift together the flour and salt into a bowl.
  2. Mix the yeast with ½ cup lukewarm water and set aside for 10 minutes.
  3. Add ghee and sugar to the flour mixture. Then, add yoghurt and dissolved yeast or baking soda. Mix well.
  4. Knead the dough until it becomes soft and pliable. Use a little oil if necessary.
  5. Cover the dough with a wet cloth and let it rest for 4 hours.
  6. Heat ghee in a frying pan over medium heat.
  7. Divide the dough into small balls and roll them out very thin.
  8. Deep fry the rolled dough in hot ghee until golden brown. The dough should puff up with an airy pocket inside.
  9. Remove from oil and serve hot with channa or choley.
