Learn to Prepare Bhatoora: A Traditional Indian Fried Bread Recipe

- 5 cups (650 g) wheat flour
- 1 teaspoon salt
- ½ teaspoon active dry yeast or 1 teaspoon baking soda
- 2 teaspoons ghee
- 2 teaspoons sugar
- 1 cup (275 g) yoghurt

Procedure
- Sift together the flour and salt into a bowl.
- Mix the yeast with ½ cup lukewarm water and set aside for 10 minutes.
- Add ghee and sugar to the flour mixture. Then, add yoghurt and dissolved yeast or baking soda. Mix well.
- Knead the dough until it becomes soft and pliable. Use a little oil if necessary.
- Cover the dough with a wet cloth and let it rest for 4 hours.
- Heat ghee in a frying pan over medium heat.
- Divide the dough into small balls and roll them out very thin.
- Deep fry the rolled dough in hot ghee until golden brown. The dough should puff up with an airy pocket inside.
- Remove from oil and serve hot with channa or choley.
