Easy Israeli Potato Pancakes (Latkes) Recipe That Is Perfect Side Dish For Parties
Israeli potato pancakes, known as "latkes" in Hebrew, are a traditional and beloved dish that is often served during Hanukkah but can be enjoyed year-round. These crispy, golden-brown pancakes are made from grated potatoes, onions, eggs, and flour, and are fried until they are crispy on the outside and tender on the inside.
They are typically served with applesauce or sour cream, but can also be enjoyed with other toppings or as a side dish to a variety of meals. In this article, we will share a traditional Israeli potato pancake recipe that is perfect for parties and gatherings and you can easily prepare this at home.

Ingredients (Serves 4)
- 4 large potatoes
- 1 medium onion
- 1 egg, beaten
- 2 tablespoons of Matzo meal, cornmeal, or flour
- Salt to taste
- 2 tablespoons of vegetable oil
- Applesauce and/or sour cream for topping
Appliances Required
- 1 large mixing bowl
- 1 10-inch frying pan or skillet
- Grater
- Spatula for flipping pancakes

What To Prepare
- Start by peeling the potatoes and onion. Grate them into a large mixing bowl.
- Add the beaten egg, your choice of Matzo meal, cornmeal, or flour, and salt to the grated potatoes and onion. Mix well until all ingredients are evenly combined.
- Heat the vegetable oil in a 10-inch pan over medium heat until it is quite hot but not smoking.
- Carefully drop 1-2 tablespoons of the potato mixture onto the pan for each pancake. Flatten slightly with the back of the spoon if needed.
- Fry each side until golden brown and crispy. This should take about 3-4 minutes per side.
- Once cooked, remove the pancakes from the pan and place them on a paper towel to drain any excess oil.
- Serve hot with a dollop of applesauce and/or sour cream on top.
Variations
1. Sweet potato latkes: Replace some or all of the regular potatoes with sweet potatoes for a sweeter twist on this classic dish.
2. Zucchini latkes: Add grated zucchini to the potato mixture for a lighter, more vegetable-forward version of the dish.
3. Spiced latkes: Add spices such as cumin, coriander, or paprika to the potato mixture for a more flavorful pancake.
4. Vegan latkes: Replace the eggs with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) for a vegan-friendly version of the dish.
