- Vegetable oil (for deep frying)

How To Prepare
1. For the best homemade potato chips, choose russet potatoes. They have a high starch content, which makes them ideal for getting that crispy texture. Avoid waxy potatoes like red or new potatoes, as they have less starch and more moisture.
2. Scrub the potatoes thoroughly under cold water to remove any dirt. Peel the potatoes using a vegetable peeler if you prefer your chips without skin. However, leaving the skin on can add extra flavor and a rustic touch to your chips.
3. Use a mandoline slicer set to the thinnest setting for uniform slices. If you don't have a mandoline, a sharp knife will do the job, but ensure the slices are as even as possible to cook uniformly. The ideal thickness is about 1/16 inch (1.5 mm).
4. Place the potato slices in a large bowl of cold water. Soaking helps remove excess starch, which can cause the chips to become soggy. Let the slices soak for at least 30 minutes, or up to an hour for even crispier results.
5. After soaking, drain the potato slices in a colander or strainer. Pat them dry thoroughly with paper towels. Removing excess moisture is crucial for achieving crispy chips, as water can cause the oil to splatter and result in soggy chips.
6. In a deep fryer or heavy-bottomed pan, heat about 3-4 cups of oil to 350-375°F (175-190°C). Fry for 2-3 minutes, or until the chips turn golden brown and crispy.
7. Use a slotted spoon or tongs to remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil.
8. While the chips are still hot, sprinkle them with salt or any desired seasonings. This helps the seasoning stick to the chips better.
9. Let the chips cool completely on a cooling rack or baking sheet. Once cooled, store them in an airtight container to maintain their crispiness.
