3. Use a mandoline slicer set to the thinnest setting for uniform slices. If you don't have a mandoline, a sharp knife will do the job, but ensure the slices are as even as possible to cook uniformly. The ideal thickness is about 1/16 inch (1.5 mm).

4. Place the potato slices in a large bowl of cold water. Soaking helps remove excess starch, which can cause the chips to become soggy. Let the slices soak for at least 30 minutes, or up to an hour for even crispier results.
