Buttermilk Curry Soup (Kadi Pakora): A Traditional Indian Recipe to Enjoy

Pakora:

- 1 cup chickpea flour (besan)
- Water
- Salt
- Turmeric powder
- Vegetable oil
Curry:
- 2 glasses cultured buttermilk
- 1 tablespoon chickpea flour (besan)
- Turmeric powder
- 1 pinch asafoetida
- Salt
- Black mustard seeds
- 1 clove garlic, minced
- ¼-inch piece of ginger root, peeled and minced
- 4-5 curry leaves (kadi patta)
- 1 small onion, finely chopped
Pakora:
- Mix chickpea flour with water, salt, and turmeric to form a thick batter.
- Heat oil in a large pan.
- Drop spoonfuls of batter into the pan to make round pakoras.
- Fry until golden brown, then remove from oil.
Curry:
- Mix buttermilk, chickpea flour, turmeric, asafoetida, and salt until smooth.
- Heat oil in a pan. Add mustard seeds, garlic, ginger, curry leaves, and onion. Fry until slightly reddish.
- Add the buttermilk mixture to the onions. Stir over medium heat until it bubbles.
- Add pakoras, reduce heat, cover with a lid, and turn off the flame.
- Serve hot with rice or roti.
