  • 2 kg (4 lbs) chicken pieces
  • 250 g (8 oz) mushrooms, coarsely chopped
  • 125 g (4 oz) bacon, coarsely chopped
  • 10 onions, peeled and minced
  • 3 cloves garlic, peeled and minced
  • 45 g (1½ oz) butter
  • 1 bottle red wine
  • 3 sprigs parsley
  • 1 sprig thyme
  • 2 bay leaves
  • 2 tbsp flour
  • 1 tsp olive oil
  • Chopped parsley for garnish

Procedure

  1. Preheat the oven to 180°C (350°F).
  2. Remove the skin from the chicken pieces and season them well.
  3. Add olive oil to a flame-proof casserole dish.
  4. Render the bacon in the casserole and add the minced onions.
  5. Add garlic, mushrooms, and then the chicken pieces.
  6. Add the red wine, parsley, thyme, and bay leaves.
  7. Bake in the oven for about 45 minutes.
  8. A few minutes before finishing, mix flour with olive oil and add to the casserole.
  9. Mix well to coat the chicken with sauce.
  10. Sprinkle chopped parsley over the chicken before serving.
