Saffron Rice Recipe: A Fragrant Indian Side Dish Perfect for Chicken
Saffron rice is a delightful dish with a unique yellow or tan hue. It has a taste that reminds one of spice breads and cakes. - 1 cup long-grain basmati rice
- ½ teaspoon saffron threads
- 2 cups chicken stock
- 6 tablespoons oil or ghee
- ½ cup minced celery
- 1 inch piece of cinnamon stick or equivalent ground cinnamon
- 2 cloves
- 1½ tablespoons brown sugar
- 1½ tablespoons molasses
- 1 teaspoon salt
- 1 pinch of ground coriander
- 1 pinch of ground cardamom

- Fork for fluffing rice
Procedure
- Wash the rice in cool water until the water runs clear.
- Soak the saffron threads in a tablespoon of boiling water.
- Heat oil, cinnamon, and cloves in a heavy saucepan.
- Add minced celery to the saucepan.
- Add rice to the saucepan and stir for about five minutes until grains are golden.
- Add chicken stock, brown sugar, molasses, salt, coriander, and cardamom.
- Stir to dissolve the sugar completely.
- Bring the mixture to a boil, then reduce to a low simmer.
- Add the saffron mix, including both water and threads, stirring gently.
- Cover and cook for about twenty-five minutes or until rice is tender and liquid is absorbed.
- Fluff the cooked rice with a fork before serving.
