Cook Time- 15 mins
Total Time- 25 mins
Ingredients
For the pasta:
- 400 grams of pasta (spaghetti, penne, or your choice)
- Salt for boiling water
For the tomato sauce:
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 1 can (400 grams) of crushed tomatoes or tomato puree
- 2 tablespoons of tomato paste
- 1 teaspoon of sugar (optional, to balance acidity)
- Salt and pepper to taste
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- A pinch of red pepper flakes (optional, for heat)
- Fresh basil leaves for garnish (optional)
- Grated Parmesan cheese for serving (optional)

How To Prepare
1. To cook the pasta, fill a large pot with water, add a generous amount of salt, and bring it to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set it aside.
2. To prepare the Tomato Sauce, in a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant. Be careful not to burn the garlic.
3. Pour in the crushed tomatoes and tomato paste, stirring well to combine. Add the sugar (if using), salt, pepper, dried oregano, dried basil, and red pepper flakes. Stir to mix all the ingredients.
4. Bring the sauce to a gentle simmer, then reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally. If the sauce becomes too thick, add a bit of the reserved pasta water to reach your desired consistency.
5. Once the sauce has simmered and the flavors have melded together, add the cooked pasta to the skillet. Toss the pasta in the sauce until it's well coated. If the sauce is too thick, add a bit more of the reserved pasta water until you reach the desired consistency.
6. Taste and adjust the seasoning with more salt, pepper, or red pepper flakes if needed.
7. While serving, divide the pasta among serving plates. Garnish with fresh basil leaves and a generous sprinkle of grated Parmesan cheese, if desired. Serve immediately and enjoy!
