Puttu is a traditional breakfast dish from Kerala, India. It is made with rice flour and coconut. This dish is often served with steamed bananas, chickpea curry, chicken curry, or boiled green gram with pappad. Puttu is a staple in many households and is known for its simple yet delicious taste.

  • 1 medium-sized coconut
  • 4 cups rice flour (puttu powder)
  • Salt to taste
  • Water (enough to moisten the flour)

  • Puttu vessel (puttu kutti) or pressure cooker

Procedure

  1. Grate the coconut finely.
  2. Mix the rice flour and salt in a wide bowl. Add half of the grated coconut.
  3. Rub the mixture with your fingertips, sprinkling water until it is moist and coarse.
  4. If using ready-made flour, let it sit for an hour to absorb more water.
  5. Check the consistency. You should be able to form a ball that crumbles easily. Adjust water as needed.
  6. Spread some coconut at the bottom of the puttu vessel and fill it with the moist flour, layering it with coconut.
  7. Steam on the puttu vessel or pressure cooker nozzle. Steam will escape through the top in a few minutes. It will be done in about four minutes.
  8. Serve hot with kadala curry, boiled green gram and pappad, or steamed bananas.
