  1. Roast the coriander, fenugreek, and sesame seeds without oil. Grind them into a fine powder.
  2. Heat oil in a pan. Add urad dhal, channa dhal, and red chillies. Fry for a few minutes.
  3. Add tamarind extract and salt to the pan. Allow it to boil.
  4. Add the ground spice powder and asafoetida. Mix well.
  5. Stir constantly until the mixture thickens and oil floats on top. Ensure it does not stick to the pan.
  6. Refrigerate and store the paste. Mix with cooked rice when ready to serve.
