Pulikkachal: A Traditional Tamil Spiced Tamarind Paste Recipe for Rice Dishes
Pulikkachal, also known as pulikachal, is a traditional Tamil spiced tamarind paste. This condiment is often mixed with rice to create the popular dish, Puliyodharai or tamarind rice. The paste combines tangy tamarind with a blend of spices, offering a unique flavour profile that enhances any meal. It is a staple in many South Indian households and is cherished for its rich taste and versatility.
- 1 teaspoon coriander seeds (dhaniya)
- 1 teaspoon fenugreek seeds
- 1 teaspoon sesame seeds
- 3 tablespoons oil
- 1 teaspoon urad dhal (black gram)
- 1 teaspoon channa dhal (split chickpeas)
- 4 red chillies
- 1 cup tamarind extract
- Salt to taste
- ¼ teaspoon asafoetida
- Peanuts (optional)

- Roast the coriander, fenugreek, and sesame seeds without oil. Grind them into a fine powder.
- Heat oil in a pan. Add urad dhal, channa dhal, and red chillies. Fry for a few minutes.
- Add tamarind extract and salt to the pan. Allow it to boil.
- Add the ground spice powder and asafoetida. Mix well.
- Stir constantly until the mixture thickens and oil floats on top. Ensure it does not stick to the pan.
- Refrigerate and store the paste. Mix with cooked rice when ready to serve.
