Pork Aachi Recipe: A Traditional Indian Dish Inspired by Kerala Cooking
Pork Aachi is a delicious dish inspired by Kerala cuisine. It combines the rich flavours of pork with aromatic spices. - 4 tablespoons coconut oil
- 500 grams pork, diced
- 4 teaspoons meat masala powder
- ½ medium-sized onion, finely sliced
- 3 green chilli peppers
- 1 tablespoon vinegar
- 1 teaspoon minced ginger (or ginger paste)
- 1 teaspoon minced garlic (or garlic paste)
- 1 pork stock cube
- 3 tablespoons ready-to-mix potato mash

- Wok or suitable cooking vessel
- Knife
- Cutting board
- Spoon or ladle for stirring
Procedure
- Heat half the coconut oil in a wok. Brown the diced pork in it.
- Add half of the meat masala powder. Fry for one minute.
- Add vinegar and fry for another minute. Pour in 1 cup of water and cook until the meat is half done.
- Sauté sliced onions and chopped chillies in the remaining coconut oil over medium heat.
- Add ginger and garlic after about 4 minutes. Stir fry for 3 more minutes.
- Add the remaining meat masala powder. Cook until onions are translucent.
- Add the pork stock cube and ¼ glass of water. Keep on low heat for around 4 minutes.
- Add half-cooked meat to the mixture. Cook on medium heat until the meat is thoroughly cooked.
- Add ¼ cup of water and potato mash. Adjust water for desired thickness.
- Remove from heat and let it rest for 3-5 minutes before serving.
