Phulourie: A Traditional Recipe for Split Pea Fritters to Enjoy with Dhal or Chutney

- ½ pint split peas or 1 pound ground split pea flour
- ½ cup flour
- 1 teaspoon baking powder
- 2-3 cloves garlic, ground
- 1 beaten egg
- Salt to taste
- ¼ teaspoon turmeric
- ½ teaspoon ground cumin (gheera)
- Oil for frying

Procedure
- If using whole split peas, soak them overnight in lightly salted cold water. Drain and grind finely using a mill or food processor.
- Mix all the ingredients in a bowl. Add enough water to achieve a dropping consistency.
- Heat oil in a frying pan or deep fryer. Drop dollops of batter into the hot oil. Use your thumb and forefinger to form balls about ¾ inch in diameter.
- Fry until golden brown. Remove from oil and drain on brown paper or kitchen towel.
