Murghi Korma Recipe: A Traditional Indian Chicken Delight for Family Meals
Murghi Korma, also known as Chicken Korma, is a popular dish in South Asian cuisine. This mild and creamy curry is perfect for those who prefer less spicy food. The dish combines tender chicken pieces with aromatic spices and a rich sauce. It is often served with pilaf rice, making it a complete meal.
Marinade:

- Whole chicken, skinned and cut into medium pieces
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1½ tsp coriander powder
- 1½ tsp cumin powder
- ½ tsp nutmeg powder (optional)
- 1 tbsp Greek yogurt
Cooking:
- 2 medium onions, chopped
- 6–8 cardamom pods
- 3–5 whole cloves
- 1 medium cinnamon stick
- Black pepper, crushed, to taste
- 1–2 tbsp ghee or butter
- Salt, to taste
- 1 tbsp sugar
Serving:
- 2 tbsp coconut cream or crushed coconut
- ½ cup single cream
- 4–6 threads saffron
- A few drops rosewater (optional)
- 1 tbsp toasted almond flakes for decoration (optional)
- Bowl for marinating
- Cling film
- Frying pan
- Slotted spoon
- Microwave (for warming cream)
Procedure
- Combine the chicken with all marinade ingredients. Cover the bowl with cling film and marinate in the fridge for 1–3 hours.
- Fry the onions in ghee until they start to brown but remain soft. Remove with a slotted spoon and set aside.
- Add the marinated chicken to the hot ghee and cook over medium heat.
- Dry toast the whole spices in a hot frying pan for about a minute until aromatic.
- Add the whole spices and black pepper to the chicken. Stir occasionally and cook covered.
- If water separates from the chicken, add coconut cream, salt, and sugar.
- Add boiling water if the chicken starts to dry up before it's cooked.
- Warm the single cream in a microwave and add saffron to it.
- Add the cream when the chicken is almost cooked.
- Remove from heat and serve with fried onions, rosewater, and almonds.
