Khao Pad Gai: A Traditional Thai Chicken Fried Rice Recipe in 40 Minutes
Khao Pad Gai, or Thai Chicken Fried Rice, is a popular street food from central Thailand. This dish combines fragrant jasmine rice with tender chicken and fresh vegetables. It's a simple yet flavourful meal that can be prepared in about 40 minutes. The recipe is flexible, allowing for adjustments to suit your taste preferences.
- 4 tablespoons peanut oil
- 1 large chicken breast, sliced into thin strips
- 2 eggs, unbeaten
- 4 cups (900 g) cooked Thai jasmine rice, refrigerated overnight
- ½ yellow onion, chopped into strips
- ¾ roma tomato, cut into strips
- 2 green onions, thinly sliced
- ¾ cup (180 g) cilantro, finely chopped
- Thai fish sauce (nam pla)
- Soy sauce
- 1 tablespoon sugar (preferably palm sugar)
- 1 teaspoon salt
- 2 cloves garlic, minced and fried
- Vinegar

- 1 teaspoon MSG
- 2 tablespoons Thai chili sauce
Garnish
- 3 slices cucumber, peeled
- 3 slices roma tomato
- 3 sprigs green onion
- Lettuce leaf
Procedure
- Prepare all ingredients and set them aside in small bowls near the stove.
- Add about 4 tablespoons of peanut oil to a wok and heat on high.
- Add the chicken strips when the oil is almost smoking. Stir vigorously.
- When the chicken starts to brown, push it up the side of the wok. Crack the eggs into the wok.
- Stir the eggs until almost scrambled. Mix in the chicken and stir for another 30 seconds.
- Push the eggs and chicken to the side. Add more oil if needed and stir-fry the tomato and onion for about 5 minutes.
- Add the cold cooked rice and mix everything together.
- Turn the heat to low. Add fish sauce and soy sauce to taste.
- Add sugar, salt, MSG (if using), vinegar, chili sauce (if using), and fried garlic. Stir well and turn off the heat.
- Arrange garnishes on a lettuce leaf on a large platter. Serve the fried rice next to it.
