Khanom Salim: A Traditional Thai Dessert of Sweet Mung Bean Noodles with Coconut Syrup
Khanom Salim is a traditional Thai dessert known for its sweet mung bean noodles served with coconut syrup. This dessert is popular for its unique taste and the fragrant scent of jasmine. To make Khanom Salim, you will need the following ingredients:

- 1 cup (100 g) mung bean flour/starch
- 5 cups (550 g) water
- Food colouring
- 2 cups (400 g) white granulated sugar
- 1 cup (110 g) water
- 1 cup (150 g) coconut milk
- Jasmine flavouring
- Crushed ice
You will need the following equipment:
- Stove
- Salim press (for shaping dough into noodles)
- Bowl (400 ml)
- Pan
Procedure
- Mix the mung bean flour and water until smooth. Divide into two or three portions. Add one to two drops of food colouring to each portion.
- Transfer each coloured dough portion into a pan. Place on the stove over low heat.
- Stir constantly for about 15 minutes until the dough is cooked and turns clear.
- Place all the dough in the salim press. Press the dough into a bowl of cold water.
- Create a simple syrup by mixing sugar and water over low heat until the sugar dissolves.
- Add noodles to a small bowl with crushed ice. Top with jasmine-flavoured coconut milk and sugar syrup.
