  • 2 eggs, well beaten
  • 4 ounces (125 g) breadcrumbs
  • ¼ pint (150 ml) water
  • Squeeze of lemon juice

Procedure

  1. Peel and core the apples. Slice them and place in a saucepan with the water.
  2. Cook until soft, similar to applesauce. Remove from heat and add butter, sugar, and lemon juice. Mix well.
  3. While the mixture cools, beat the eggs thoroughly. Once cool, mix in the eggs.
  4. Butter a deep baking dish. Spread breadcrumbs around it so they stick to the bottom and sides, keeping some for the top.
  5. Pour the apple and egg mixture into the dish. Cover with a thick layer of breadcrumbs.
  6. Bake in a moderate oven at 350°F (180°C / Gas Mark 4) for about half an hour.
  7. Turn out onto a flat dish and sprinkle with sugar before serving.
