- 200 g smoked haddock
- 100 g prawns
- 100 g mussels
- 5 scallops
- 1 kg potatoes
- Nutmeg
- Butter
- 150 ml fresh single cream
- 2 bay leaves
- Milk (enough to submerge the fish)
- 50 g Emmental or Appenzeller cheese, grated

- Saucepan

- Electric whisk (optional)
- Oven
Procedure
- Place all the fish in a saucepan. Add enough milk to cover the fish. Add bay leaves and a pinch of salt.

- Peel and boil potatoes until soft, about 20 minutes. Mash well, using an electric whisk if available.
- Add some milk from the poached fish to the potatoes. Mix in cream and grated nutmeg. Ensure mash is not too runny.
- Place cooked fish in an oven-proof dish with remaining milk sauce. Compact gently.
- Spread mashed potato over fish to about 1½ inches high. Ridge top with a fork for colour.
- Add grated cheese over potato if desired. Decorate with peeled prawns if artistic.
- Bake in oven at 220°C for about 30 minutes until top is golden and bubbling.
- Remove from oven and serve immediately.
