Faina: A Traditional Chickpea Flatbread Recipe from Uruguay
Faina is a delicious flatbread made from chickpea flour. It is popular in Uruguay and Argentina. This dish can be enjoyed on its own or with a slice of pizza, known as "pizza a caballo" or "pizza on horseback". In these countries, there are two types of Faina: "faina de orilla" with crispy edges and "faina del medio" with a texture like Yorkshire pudding.
- 250 g chickpea flour
- 2 generous tablespoons wheat flour
- 1 teaspoon salt
- 500 ml lukewarm water
- 2 tablespoons oil

- Bowl
- Wire whisk or food processor
- Round baking dish (approx 45 cm in diameter)
- Oven
Procedure
- In a bowl, mix chickpea flour, wheat flour, salt, and water. Beat slowly using a wire whisk or use a food processor. Add 2 tablespoons of oil.
- Add some oil to a round baking dish and preheat it in the oven for a few minutes.
- Remove the dish from the oven and pour the faina mixture into the hot dish.
- Place it back into the oven for about 20 minutes until the top is golden and the edges are dry with a fried look.
- Remove from the oven and let it rest for 2-3 minutes. Sprinkle with pepper and cut into wedges.
