Easy Mushroom Fried Rice

Ingredients

  • 2 cups of cooked rice (preferably cold)

  • 1 carrot, diced
  • 1/2 cup of peas (fresh or frozen)
  • 2 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce (optional)
  • 1 tablespoon of vegetable oil
  • 2 eggs (optional)

How To Prepare

1. Cold, cooked rice works best for fried rice as it helps to prevent the dish from becoming mushy. If you don't have leftover rice, cook fresh rice and spread it on a baking sheet to cool. Refrigerate the rice for at least an hour to get the right texture for frying.

2. Wash and slice the mushrooms. Finely chop the onion, mince the garlic, and dice the carrot. If you are using fresh peas, blanch them in boiling water for a couple of minutes until tender. If you are using frozen peas, simply thaw them.

7. If you are using eggs, push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until they are fully cooked, then mix them with the vegetables. If you prefer a vegetarian version, you can skip this step.

8. Add the cold, cooked rice to the pan. Break up any clumps of rice with a spatula or spoon. Toss the rice with the vegetables and mushrooms, making sure everything is well combined.

9. Pour the soy sauce and oyster sauce (if using) over the rice mixture. Stir well to ensure that the sauce is evenly distributed throughout the rice. Taste and adjust the seasoning with salt and pepper as needed. Be mindful of the saltiness of the soy sauce when adding extra salt.
