  • 4 cups cherry tomatoes, halved

  • 4 skinless boneless chicken breast halves, thinly sliced crosswise
  • 4 cups firmly packed torn fresh spinach leaves (about 8 ounces)

Procedure

  1. Preheat the oven to 400°F (200°C).
  2. Place a large baking sheet in the oven to heat.
  3. In a medium bowl, mix dill, orange peel, garlic, and salt. Season with pepper.
  4. In a small bowl, combine tomatoes, olive oil, and 1 teaspoon of the dill mixture.
  5. Add chicken to the remaining dill mixture in the medium bowl and toss to coat.
  6. Cut four sheets of foil, each about 20 inches long.
  7. Arrange 1 cup of spinach on one sheet of foil.
  8. Place a quarter of the sliced chicken mixture atop the spinach.
  9. Spoon a quarter of the tomato mixture atop the chicken.
  10. Fold foil over, enclosing contents completely and crimping edges tightly to seal.
  11. Repeat with the remaining three foil sheets, forming four packets total.
  12. Arrange foil packets in a single layer on the heated baking sheet.
  13. Bake until chicken is just cooked through, about 15 minutes.
  14. Transfer to plates; let stand for five minutes before serving.
