- 4 tablespoons minced fresh dill
- 4 teaspoons grated orange peel
- 3 teaspoons minced garlic
- ¾ teaspoon salt
- 4 cups cherry tomatoes, halved
- 1 tablespoon olive oil
- 4 skinless boneless chicken breast halves, thinly sliced crosswise
- 4 cups firmly packed torn fresh spinach leaves (about 8 ounces)

Procedure
- Preheat the oven to 400°F (200°C).
- Place a large baking sheet in the oven to heat.
- In a medium bowl, mix dill, orange peel, garlic, and salt. Season with pepper.
- In a small bowl, combine tomatoes, olive oil, and 1 teaspoon of the dill mixture.
- Add chicken to the remaining dill mixture in the medium bowl and toss to coat.
- Cut four sheets of foil, each about 20 inches long.
- Arrange 1 cup of spinach on one sheet of foil.
- Place a quarter of the sliced chicken mixture atop the spinach.
- Spoon a quarter of the tomato mixture atop the chicken.
- Fold foil over, enclosing contents completely and crimping edges tightly to seal.
- Repeat with the remaining three foil sheets, forming four packets total.
- Arrange foil packets in a single layer on the heated baking sheet.
- Bake until chicken is just cooked through, about 15 minutes.
- Transfer to plates; let stand for five minutes before serving.
