Cheese-Stuffed Chicken Breasts Recipe Featuring Cornbread and Cranberries
Cheese-stuffed chicken breasts are a delightful dish that combines tender chicken with a rich and creamy filling. This recipe is perfect for those who enjoy a mix of savoury and sweet flavours. - 4 boneless skinless chicken breasts
- 1 tablespoon salt, divided
- 1 tablespoon freshly ground black pepper, divided
- 1 cup crumbled cornbread
- ¼ cup dried cranberries, roughly chopped
- ½ cup apple jelly
- 3 dried apple rings, finely minced
- ½ cup cream cheese
- Olive oil
- Honey

- Narrow boning knife
- Gallon (4 litre) size zip-top bag
- Kitchen twine
- Large roasting pan
- Probe thermometer
- Aluminium foil
Procedure
- Combine ¼ teaspoon salt, ¼ teaspoon black pepper, cornbread, cranberries, apple jelly, and cream cheese. Pour the mixture into a gallon (4 litre) size zip-top bag with a small hole snipped in one corner.
- Using a narrow boning knife, make a slit in the side of each chicken breast without cutting all the way through.
- Fill the slits two-thirds full with the cornbread mixture. Brush the edges with honey and press together to seal. Tie closed with kitchen twine.
- Place the chicken in a large roasting pan. Brush with olive oil and season each piece liberally with the remaining salt and pepper.
- Insert a probe thermometer into one of the pieces without touching the stuffing. Place the pan in the centre of a preheated oven at 400°F (205°C) and cook until the internal temperature reaches 165°F (74°C).
- Remove to a plate and cover with aluminium foil. Let rest for seven minutes before removing the thermometer and untying. Serve warm.
