Pão de Queijo, or Brazilian cheese puffs, are a delightful treat from Brazil. These cheese puffs are made using tapioca flour and are similar to gougères. They are often enjoyed at breakfast or as a snack. The recipe is simple yet delicious, making it a favourite in Brazilian cuisine.
- ⅔ cup (160 ml) milk
- ⅓ cup (80 ml) neutral oil (e.g., vegetable oil)
- 2 cups (450 g) fine cassava flour or tapioca flour
- 6 ounces (170 g) grated hard cheese (a mix of cheddar and parmesan is good)
- 2 eggs
- Salt to taste
- Pepper to taste

- Saucepan
- Baking tray
- Oven
Procedure
- Mix the milk and oil together in a saucepan. Boil until a white foam appears.
- Gradually add flour to this hot mixture. Mix well to form a firm dough with no lumps.
- Let the dough rest for 15 minutes.
- Preheat the oven to 375°F (190°C).
- Mix the eggs, cheese, salt, and pepper into the dough. The dough will become sticky and wet. If too wet, add more flour and cheese to make firmer balls.
- Grease your hands and form small balls, about 1–2 inches in diameter.
- Place the balls on a greased baking tray. Bake for 15–20 minutes until the top begins to brown.
- Cool slightly before serving.
