Srinagar, Nov.11 : Of the various Kashmiri delicacies that are widely popular, Khasta Shangram holds its own place. It is one of the traditional dishes of Kashmir.
Known for its distinct taste, Khasta Shangram tastes crispy, tasty and sweet. It is relished by almost every Kashmiri. Though it is used throughout the year, it is particularly distributed during wedding or festive occasions in Kashmir.
Though the delicacy has been known for ages here, it is not easy to prepare. It is said that not many people can prepare Khasta Shangram at home.
The people who today prepare Khasta Shangram, learnt it from their elders.
It is made of ingredients like Suji (semolina), Vanaspati Ghee, sugar and flour. These are mixed in a big pot. The mixture is then fried in hot oil for three to five minutes and then it is dipped in the sugar syrup.
"It has both Suji and sugar as its ingredients; that's why it is loved by everyone. People have it with Chai," said Mohammad Shafi, Khasta Shangram maker.
It is generally sold for rupees 80 per kilogram.
"We are doing this traditional business for last seven generations and we are doing very good business. Khasta Shangram makers are doing very good business during whole year. They get large orders on festivals and other functions," said Mohammed Shafi, one Khasta Shangramm maker.
"And it's a very big honour for us because with the help of Khasta Shangram our tradition is still alive," he added.
Besides, Khasta Shangram also proves that it is available at reasonable prices, therefore everyone can afford to have it.
"We have this sweet at a price range of Rs 60 per kilograms. We have another variety of the same kind available at Rs 150 per kilograms as it can be stored for a long time," said Saleem Ahmad, a Shopkeeper.
"It is available in Kashmir and is loved by Kashmiris the most. During the festival of Eid children love to have it and also we offer it during marriages," said Firdousa, a customer. By Afzal Bhat
