Chandigarh, Feb 29 (UNI) "Awadhi Food Festival" from the city of Nawabs 'Lucknow' began at Sukhna Lake here today.
The festival, organised by the CITCO in collaboration with Uttar Pradesh Tourism, will continue till March 3, CITCO Managing Director Jasbir Singh Bir said.
The home for "Awadhi Food" is Uttar Pradesh and the capital city of Lucknow developed cooking into an art form.
The traditional "bawarachies" (cooks) of Lucknow have brought some of this traditional culinary art to the City Beautiful with the support of CITCO in terms of manpower and infrastructure.
The 'bawarchies' and 'rakabdars' of Awadh, by their expertise of blending spices, achieved a high degree of finesse in cooking and presentation of food that took culinary art to the highest realms and gave birth to the 'Dum' style of cooking or the art of cooking over a slow fire.
The richness of Awadhi cuisine lies not only in the variety of cuisine but also is the ingredients used in creating such a variety.
